How do I start baking on your oven?

At Avantec, we recommend the following process:

First, find the right settings to get the bottom of the pizza baking the way you like. This is accomplished by adjusting the time and temperature settings on the oven. Once you feel good about the bake of the crust, which you will want to be the same on a single topping or on a “works” pizza, then begin adjusting the top air plates to find the right color and bake on the top of the pizza. If the top is too dark, block off a row of holes on the top air plates one at a time until you find the right setting. If the top of the pizza is to light, then open up a row of holes by removing a block-off strip one at a time until the top of the pizza looks the way you would like.

Why would I want to buy split belts?

On our 3242-2 Oven, we can split both of the belts, which gives you, the operator, up to four different speeds and the potential for up to four different air flow patterns to help create the perfect bake for a variety of menu items and products.

On a 3242-2 with two split belts, here is an example of possible belt settings: subs on the first belt at 2:30 minutes, pizza on the second at 5:00, wings from frozen on the third at 7:00 minutes, and bread sticks on the fourth at 4:00 minutes. As you can see, for operators with varied menu items requiring different bake times, split belts are a good solution.

We also offer “product doors” as an option, but they require a guess on where to place the product in the oven, which means that the product probably won’t bake as consistently or evenly as it would on a split belt with a set time. Inserting a product in through the product door could also cause products already in the oven to be pushed forward or backward to make room, potentially changing the bake on other products as well.

Do Avantec Ovens have the baking capacity I need?

Avantec Ovens offer three different platform sizes:

  1. 2030-2 with a 20” wide and 30” long baking chamber with 2 decks;
  2. 3242-1 or -2 with a 32”wide and 42” long baking chamber and 1 or 2 decks;
  3. 3260-2 with a 32” wide and 60” long baking chamber with 2 decks.

Many stores use ovens with 32” wide belts and 70” baking tunnels. Two of our 3242-2 Avantec Ovens have 20% more capacity than two 32” wide and 70” long baking ovens (MM570 style ovens). Two of Avantec 3260-2 ovens have about 15% more capacity than three of the large style 32” by 70” ovens mentioned above. Even with all that additional capacity a smaller hood can be used in most cases.

Are Avantec Ovens easy to clean?

People tell us that because of our hinged front door, easy-to-remove conveyor belts and pull-out air plates, cleaning Avantec Ovens is fast and easy. With no hard to reach places and stainless steel construction, Avantec Ovens are so simple to clean, it will be done more often. A clean oven does bake better.

Can your oven keep up on a busy Friday night?

Our oven package offers more baking capacity than most models, and that does help, but the real key is in our pulse-modulating gas combustion technology and our reserve power. Recovery under the heaviest loads is built into all Avantec ovens for consistent and quality baking from first to last, all day long. Under light loads, you save energy, and under heavy loads, you get a quality bake every time allowing your customers to receive what you are proud to sell them.

If my menu changes, can my oven change along with it?

It is easy to change the time and temperature settings on Avantec Ovens, and with our pull-out top air plates and our easy to use block-off strips, Avantec can be modified to bake almost any product, including subs, calzones, wings, cookies, pizza by the slice, etc. It is also easy to add a split belt in the field. Just order a retro-fit split belt package, and a service agent can easily add a split belt to your oven at any time.

I love the idea of split belts, but I make a 20” pizza.
Aren’t all split belts 16”?

Not with Avantec Ovens. We do offer two 16” belts, but we also offer a 20” with a 12” and a 24” with an 8” side by side all for the same price. Visit our options page under to learn more.

Will I get some factory help once I buy my ovens?

Not only does an authorized factory start-up come with every Avantec oven, but if you request it, an Avantec agent will come and assist you in setting up your oven to help bake your products just the way you want them baked.

Why should I buy new when I can get used for less?

Just like cars, used ovens come with less of a warranty and much older technology. Also, no other oven offers such front end savings as Avantec because, with two belts in one oven, Avantec will be priced lower than any pair of like-sized ovens. In combination with our single-belt oven, Avantec Ovens offer more stacking platforms or combinations, meaning that in many cases just two of our ovens offer the baking capacity and flexibility that you need, which would take three or more ovens from other manufacturers.
